Jackfruit. I remember the first time I saw a jackfruit. I was at Max’s Harvest in Delray attending one of their weekly Chef vs. Chef events, where local chefs from Palm Beach County competed against each other. It was never a boring competition, but rather a a night of excitement where Chef Eric Baker presented the chefs with secret ingredients, usually a bit obscure. One night — out came the jackfruit, a bright green tropical fruit the size of a small baby – and I couldn’t even imagine how to use it. I was sure glad that it was the chefs up front cooking.
Little did I now that this ginormous fruit would go mainstream — and be a great alternative to meat. Once you cut up a jackfruit, you’ll find the consistency to be very similar to pulled pork and is perfect for those looking for a healthy alternative. The fruit is both low in calories and high in fiber and potassium – and is commonly served as a substitute in tacos and sandwiches.
