Did you know that September is National Honey Month? We think that calls for a month-long celebration. Therefore, this month, we’ll be featuring a variety of posts (including today’s recipe for a Florida Orange and Pine Nut Salad) that will introduce you to local beekeepers, provide you with some education – and will include a series of honey recipes from some of our favorite chefs, beekeepers, farmers and other honey enthusiasts. A big shout out to Broken Sound Club and their BEE Positive Now! campaign for inspiring us. To kick things off, we’re taking you to Bistro Ten Zero One located at the West Palm Beach Marriott in West Palm Beach.
If you’re looking for a salad to get excited about, we’ve found one just for you and it comes to us from Chef Christian Quiñones of Bistro Ten Zero One (1001 Okeechobee Blvd., West Palm Beach). Chef has taken some of our favorite Florida ingredients (you can’t go wrong with Florida oranges) to make a Florida Orange and Pine Nut Salad with honey vinaigrette that gives you a true taste of the Florida sunshine. Better yet, it’s simple to make and can be prepared in less than 15 minutes. Enjoy this salad alone or add in a piece of grilled chicken or shrimp for a heartier meal.
Orange and Pine Nut Salad (1 serving)
- 5 ea slices of peeled oranges (cut sideways in circular form), make sure to remove any seeds.
- 1 teaspoon pine nuts (toasted)
- 1/2 each cucumber (peeled, seeded and cut in half moons)
- 1/2 each diced avocado
- 5 each Kalamata olive, cut in half
- 1 each baby mache bunch
- 1 cup mixed greens
- 1/4 cup honey vinaigrette
In a bowl, layer the mix of mache and mixed greens. Add the remaining ingredients.
Honey Vinaigrette (4 servings)
- 1/2 cup olive oil
- 1/4 cup blended oil
- 1/3 cup apple cider vinegar
- 1 tbsp dijon mustard
- 1/4 cup honey
- 1 pinch of salt
- 1 pinch of pepper
- 1/2 ea shallot, peeled
In a blender first blend, honey, mustard, vinegar and shallot, until well incorporated. Add oils and emulsify.
