Tomatoes, they are what we’re craving today, thanks to a recent visit to the newly opened The Regional Kitchen & Public House. Home to Top Chef alum Lindsay Autry, The Regional is the latest addition to the downtown West Palm Beach dining scene and from our first impression, we’ll be seeing them again very soon.

If it’s not for the use of consciously sourced ingredients, time-honored recipes or southern hospitality – Autry has brought a taste of her southern upbringing to the restaurant – it will certainly be for their Tomato Pie. Warm and decadent and oozing with goodness, this dish takes simple ingredients and does them right. It’s perfection on a plate.

What’s inside the Tomato Pie?

In a nutshell, it’s a pastry crust filled with tomatoes and cheese, but in our world it’s more of a tomato pie filled with love. Start off with a flakey pastry shell created by pastry chef Sarah Sipe. Fill it with a blend of sharp cheddar cheese, caramelized onions and roasted tomatoes picked at the peak of ripeness. Top the pie with fresh herbs and get ready for instant happiness at your dinner table.


While life can’t be all about the Tomato Pie (though we think it should be), The Regional offers many menu items that will have you calling for more. Some of our favorites from our media tasting include the Pimento Cheese Dip, prepared table-side, the Fried Chicken Thighs brined in sweet tea and the Lemon Meringue Bar prepared by pastry chef Sarah Sipe.
