For day two of National Honey Month, we take you to Moxie Kitchen + Cocktail located at The Markets at Town Center in Jacksonville. Not only does Chef/Owner Tom Gray have two James Beard nominations for Best Chef South, the restaurant runs the day-to-day operations with what they call a “full-circle approach” – using sustainable sourcing, working with local artisans, following eco-friendly practices and more.

These sustainable practices carry over from the kitchen to the bar – and since it is Friday – we thought that a recipe for an adult beverage might fit the bill. Bar Manager, Johnny Schaefer of Moxie Kitchen + Cocktail shared with us his recipe for the Best Bet Cocktail for day two of #30daysofhoney recipes.

Best Bet Cocktail


Recipe by Johnny Schaefer, Bar Manager at Moxie Kitchen + Cocktail
Makes one serving.

1 1/2 oz Old Overholt Rye
1/2 oz Cointreau
1/2 ounce Angostura Aromatic Bitters
3/4 ounce Pear Shrub (see recipe below)
1/2 ounce freshly-squeezed lemon juice
1/2 ounce honey (Moxie uses Hoby’s Honey, a local honey from Producing Edibles in Jacksonville)
lemon zest, for garnish

Combine all ingredients in a cocktail shaker. Shake and strain over a large ice cube in a Collins glass. Garnish with a fresh lemon zest. Serve immediately.

Pear Shrub

Prior to the invention of refrigeration, a shrub syrup was a means of preserving fruit long beyond its picking. Very versatile, shrubs include sweet and tart flavors, so they stimulate the appetite and quenches thirst. Shrubs make an interesting, flavorful addition to cocktails and non-alcoholic spritzes.

2 cups pears, chopped
1/2 cup sugar
1/2 cup apple cider vinegar

In a large mason jar, add pears and sugar. Place lid on the jar and shake. Refrigerate for 24 hours shaking every 4 hours. After 24 hours, shake well and add the vinegar. Return to th refrigerator for another 24 hours, shaking again every 4 hours. Strain through a fine mesh sieve and store in the refrigerator for up to 2 months.
