Green Papaya Salad
This salad is traditionally garnished with roasted peanuts. I used a julienne peeler to cut the papaya. Taste the salad before serving to be sure it’s an elegant combination of sweet, sour, and hot flavors. Add more ingredients to taste.
2 fresh serrano chilies, seeded and minced; or to taste
2 cloves garlic, minced
One-half Vidalia onion, minced
1 large green papaya, peeled and julienned (or shredded) (about 4 cups)
2 teaspoons sugar
2 tablespoons fish sauce
Juice of 1 lime
6 cherry tomatoes, quartered
2 tablespoons rough-chopped cilantro
In a bowl, combine the chilies, garlic, and onions. Add the papaya; toss to combine.
In a small bowl, whisk together the sugar, fish sauce, and lime juice. Add to the salad and toss to combine.
Add the tomatoes and cilantro; toss. Serve immediately. Makes four servings.
