Honey Rainbow Carrot Salad
Prep Time: 15 minutes
Cook Time: 5 minutes
2 pounds multi-colored carrots, peeled, trimmed and sliced very thinly
1/2 cup mint, chopped
1/3 cup Nature Nate’s Raw & Unfiltered Honey
1/4 cup olive oil
1/4 cup cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Sriracha sauce
With a hint of mint and a kick of Sriacha sauce, this summer time classic is full of color and flavor! Serve the salad as a side or enjoy it solo as a healthy snack.
Lightly steam carrots until they are slightly tender. Cool completely. Whisk together all remaining ingredients until well combined. Toss honey mixture with carrots. Chill until ready to serve.
